This is a review specifically of the Kindle edition. I just completed the semester using this textbook, and read the entire thing. I had never used a Kindle textbook before and thought I would take a chance and see if it was worth the cost savings. It is not, at least not for this particular book. The formatting was awful. For example, tables didn't display correctly, with contents of columns to the right wrapping underneath, making it impossible to read. Images were blurry. Words got split in odd places, that sort of thing. looked like it was hurried to "print" and not proofed very well.

Having said this, I think the Kindle version could eventually be great once they work out those kinks. The ability to search for words and phrases was super helpful. You can "highlight" and bookmark sections of text, making it easier to find later when studying.

Regarding the text itself (I have the print version as well), I would also give it a 3. There is some good information in there, but most of it is very dry. Also, the author seemed really one-sided on his opinions with respect to things like irradiated food and GMO foods (pro on both). I would have expected a textbook to be more scientific and less emotional about those topics, presenting both sides of the controversies, but that's just my opinion...others may not be bothered by that.

Overall, ok book, but not my favorite.
